For the evaluation of vegetable oils and oenotanine obtained from grape, apple seeds and nut kernel some specific spectral techniques: UV-VIS-NIR-FTIR and chemiluminescence have been used. Corroboration of these experimental data emphasized the structural complexity and the antioxidative capacity of the systems studied.
