Introduction
I have academic, professional, and laboratory experience in the characterization of biopolymers by gel permeation chromatography, rheology, differential scanning calorimetry, FTIR, XRD, SEM, and absorption dynamics. I also work with analysis of emulsions and nanoemulsions, and development of novel delivery systems. I am currently working with rheology of foods, including integral uses of habanero chili pepper, horticultural products, and agroindustrial by-products.
