In the food domain, text mining techniques are extensively employed to derive valuable insights from large volumes of text data, facilitating applications such as aiding food recalls, offering personalized recipes, and reinforcing food safety regulation. To provide researchers and practitioners with a comprehensive understanding of the latest technology and application scenarios of text mining in the food domain, the pertinent literature is reviewed and analyzed. Initially, the fundamental concepts, principles, and primary tasks of text mining, encompassing text categorization, sentiment analysis, and entity recognition, are elucidated. Subsequently, an analysis of diverse types of data sources within the food domain and the characteristics of text data mining is conducted, spanning social media, reviews, recipe websites, and food safety reports. Furthermore, the applications of text mining in the food domain are scrutinized from the perspective of various scenarios, including leveraging consumer food reviews and feedback to enhance product quality, providing personalized recipe recommendations based on user preferences and dietary requirements, and employing text mining for food safety and fraud monitoring. Lastly, the opportunities and challenges associated with the adoption of text mining techniques in the food domain are summarized and evaluated. In conclusion, text mining holds considerable potential for application in the food domain, thereby propelling the advancement of the food industry and upholding food safety standards.

Ferramentas de análise e inteligência de negócios têm se tornado peças-chave no processo de tomada de decisões nos negócios. Este estudo visa relacionar as principais funcionalidades e aplicações de duas ferramentas de Business Intelligence: Qlik Sense e Microsoft Power BI. Para isso, foi realizada uma revisão sistematizada utilizando as ferramentas StArt e VOSviewer. Foram analisadas 62 publicações dos últimos 10 anos, as quais demonstram que as ferramentas têm sido aplicadas em diversos estudos ao redor do mundo, mas nem sempre com suas funcionalidades detalhadas.

Interest in food and online communication is growing fast among marketing and business scholars. Nevertheless, this interest has been not exclusive to these areas. Researchers from different disciplines have focused their research on different concepts, target populations, approaches, methodologies, and theoretical backgrounds, making this growing body of knowledge richer, but at the same time difficult to analyze. In order to have a broader overview of this topic, this study analyzes the existent literature regarding food and social media in social sciences in order to identify the main research streams and themes explored. With this purpose, the present paper uses bibliometric methods to analyze 1356 journal articles by means of factor and social network analysis. The study contributes by revealing 4 clusters containing 11 dominant research streams within the social sciences, determining the linkages among the main research discourses, and recommending new future topics of research.

Several factors drive consumer behavior in buying meat, particularly rabbit meat. The consumption of rabbits has decreased in Europe, and the main causes of this trend are an increasing association with the perception of rabbits as pets, consumers’ changes in lifestyle, and eating habits. Additionally, increasing attention is paid to ethical issues regarding animal welfare. Investigating consumers’ knowledge, perceptions, and concerns about rabbit meat production and consumption are crucial for improving market strategies. This study investigated consumers’ perspectives of rabbit meat to provide useful information to producers for promoting this sector to consumers. A mixed-methods research design was applied. Qualitative data were collected through four focus group discussions involving 32 consumers and quantitative data through a semi-structured questionnaire administered nationally and completed by 1001 consumers. The limited use of antibiotics in inbreeding and the absence of animal suffering are factors that most influence consumers’ willingness to purchase rabbit meat. Rural/domestic farms were recognized as places where animal welfare measures can be applied and have a positive influence not only on organoleptic quality but also on ethical value and food safety. The cage was perceived as unsuitable for rabbit growth and was oriented to a process of fattening based on industrial feed and antibiotics. Respondents sought information on rabbit farming during purchase, and the label was the most used tool. The rabbit meat production sector should consider these results to meet consumers’ demands and raise awareness among operators on the use of animal welfare-based farming systems, helping to build a more positive image of the rabbit meat industry.

Today’s consumers are becoming more aware of what they consume and the implications that a proper diet can have for their health. This work aimed to understand how Lebanese people get information about foods, and which communication media they consider the most appropriate. Also, the attitudes toward food labelling were assessed. This was a cross-sectional study undertaken by means of a questionnaire survey on a sample of 258 Lebanese participants. Data analysis used statistical tools such as T-test and ANOVA with post hoc to test possible group differences or Cronbach’s alpha to assess internal scale reliability. The results showed that radio was the first choice as a media tool used by Lebanese people for gathering food information (29.1%), followed by hospitals (23.3%), and the participants also considered that these are the most appropriate means to communicate information (28.3 and 22.5%, respectively). Regarding the Lebanese behaviour on nutrition labelling, nearly half of the participants (44.6%) very frequently or always check the food labels but some showed no interest in the components and the fibres they contain. Reliability analysis showed that the items used to assess the food labelling scale have a very high internal consistency (α = 0.847). So, the Lebanese people tend to rely on radio for information about food and the labels are considered as important source of information as well. Nevertheless, Lebanese don’t consult the nutritional composition as often as desirable in order to adjust their purchases or compare to different items, aimed at healthier food choices. So in order to inform Lebanese people about related food rich in fibres and to instigate their purchasing intentions, the producing companies must rely on marketing campaigns through radio and on labels not just the information in nutritional composition.

The purpose of this study was to examine print news coverage of food safety issues linked to tainted cooking oil in Taiwan between 2013 and 2014 through the scope of framing theory. A content analysis presents the frames used by Taiwanese news outlets to portray the food incident and outlines how this coverage may have shaped and been reflected by the media. Messages published in newspapers were analyzed to investigate how the amount of coverage and framing of this well-known food safety issue changed over time. The data demonstrated that newspapers, when reporting on aspects of the food scare, relied upon various government sources. Results revealed that attribution of responsibility, weak food safety system, and inefficiency of information dissemination were the most common frames presented in the printed news. During this incident, newspaper coverage largely placed the blame and responsibility on the cooking oil manufacturers. The overall tone of the newspapers offered a moderately neutral description of government response.

During pregnancy, women exposed to microbiological risks are more susceptible to contracting specific pathogens, which can lead to serious diseases both in the mother and the foetus. Food-borne diseases can be avoided to a large extent by following good practices of food manipulation and cooking. Safe eating behaviours are influenced by knowledge and perception of food risks and are constructed, among others, online. Pregnant women often use Web 2.0 to obtain and share pregnancy-related information as a strategy of collective coping with emotions through conversations. This paper explores how knowledge and perceptions of food risks during pregnancy are shared among users on Italian Facebook pages and groups. The corpus, including 648,399 items (i.e., posts), was analysed: (a) first, by means of the Reinert method, to verify to what extent issues concerning food risks are debated; and (b) second, through a manual content analysis, to observe how food risks are addressed in terms of contents and social sharing of emotions. The main results show that food risk is not among the most discussed topics, and the least known and debated food risks are the most widespread (e.g., campylobacteriosis). Sometimes, food risks, when addressed, were minimised or denied, and the belief to be ‘less at risk’ than peers for such risk (i.e., optimistic bias) was observed. The results underline the importance, for health institutions, of building a tailored communication strategy on food risks during pregnancy to promote correct food behaviours by exploiting social networks.

Background With the influence of climate change, environmental pollution, global industrialization, and new agricultural practices, increasing amounts of chemical substances with potential risks—both anthropogenic and biogenic—enter the food supply chain, entailing new challenges to food safety and security. Although some food-risk components (FRCs) have been accessed and regulated, the toxicity and exposure level of the numerous components detected in food remain unknown, leaving questions on their effect on food safety. Therefore, multiple databases on emerging FRCs have been constructed to aid in food safety assessment, regulation, and communication; however, their focus areas, data content, quality, and accessibility have not been systematically summarized, which hinders their applications and the development of data-driven methods in the food safety field. Scope and approach The major objective of this review is to introduce representative FRC databases with different focus areas, along with their chemical presentation, data quality and availability, and successful applications. Key findings and conclusions Over the past decades, over 50 FRC databases have been released, contributing significantly to scientific research, policymaking, and education. However, our analysis unveils persistent challenges such as delayed updates, accessibility concerns, reproducibility issues, suboptimal data quality, and inadequate coverage in underdeveloped regions. To address these shortcomings, we propose an initiative aimed at enhancing future FRC databases, prioritizing the principles of findability, accessibility, interoperability, and reusability. Additionally, we highlight the potential of future strategies, e.g., natural language processing, cheminformatics-enpowered suspect and non-targeted analysis, and genome mining, for the detection and analysis of emerging new FRCs outside of existing databases. By embracing these initiatives and strategies, we lay the groundwork for a robust framework facilitating enhanced food safety assessment and informed decision-making in the face of evolving challenges.

Purpose This study aims to explore the degree of Chinese consumers' trust and confidence in the Chinese dairy products supply chain and the relationships between trust and overall confidence in dairy products safety and quality. Design/methodology/approach This study collected data from 1,278 respondents by field survey from five provinces of China. The data were analyzed using ordered logit model. Findings This study shows the following results: (1) Chinese consumer confidence in domestic dairy products and trust in actors of the dairy chain are at a moderate-to-low level. (2) Government regulators are considered to take the most responsibility, with both an optimism-enhancing and a pessimism-reducing effect (the former effect is greater), while perceived trust in dairy farmers and retailers has little effect. (3) Perceived care has both an optimism-enhancing and a pessimism-reducing effect, and the former effect is stronger. Competence and openness have an optimism-enhancing effect and a pessimism-reducing effect, respectively. (4) The importance of the three dimensions of trust related to optimism-increasing and pessimism-reduction is limited, except in the case of government regulators. Originality/value This study contributes to a better understanding of consumer trust in food safety and also help demonstrate to the actors and institutions involved in the dairy supply chain the best way to improve the performance of their duties to meet the consumers' needs for safe and quality dairy products.
