... human body needs nutrients to enable it function effectively and to maintain health; such nutrients are sourced from foods. Food nutrients include water, carbohydrates, proteins, fats, vitamins and minerals amongst others. Fishes are known to provide protein, fat and vitamins which are of great benefit to human health as it has been proven by many scientists including Job et al . [ 1]. Fish provides 22% of the protein intake in sub-Saharan Africa [2]. Fish protein is of high quality since it has an almost ideal proportion of essential amino acids. The protein in fish is easily digestible, as it contains less collagen fibre than the protein found in meat; this helps the body to maximally utilise its protein. The fats found in fish contain unsaturated fatty acids which do not pose a threat to the heart as they help reduce blood triglycerides [3]. Some authors have reported on the proximate composition of fish species [4], [5], [6], [7]. However, information on proximate composition of some fish species is scanty. Thus, there is still a need to research on the proximate composition of such fish species. This project was designed to determine the moisture, protein, fat, and ash contents of four tropical fish species which are readily available and consumed in Nigeria. It is important to determine the chemical composition of fishes as this will provide vital information in developing nutrients balance, cost effective diets and practical feeds for fish farming. Four fish samples comprising of African mud catfish ( Clarias gariepinus Burchell, 1822), Jack fish ( Selar crumenophthalmus Bloch, 1793 ) , Atlantic mackerel ( Scomber scrombus Linnaeus, 1758 ) and Cassava croaker ( Pseudotolithus senegalensis Valenciennes, 1833 ) were used for this study. All the samples were identified using standard taxonomical texts/keys. They were purchased in the raw, uncooked form from frozen foods retail outlets within the Akure metropolis, Ondo State, Nigeria. Cleaning, eviscerating, filleting and deboning were carried out on the samples. All the samples were lyophilized (SB4 Freeze drying machine, UK), milled (Sharp blender, Model HR 2815), wrapped with aluminium foil and packed into labelled plastic containers. The samples were stored at a o temperature of -20 C prior to analysis. The moisture contents of the fishes were determined before freeze-drying the samples. This was done using a forced o air oven at 105 C first for five hours and then repeated for 30 minutes interval until a constant weight was obtained. The loss in weight was calculated as the moisture content [8]. Fat was quantified using the procedure of A. O. A. C. o o [8] with n-hexane (68.5 C – 69.1 C) as solvent. The protein content of each fish was assayed by the micro-Kjeldahl method as reported by Kirk and Sawyer [9]. The gram of nitrogen obtained was multiplied by the factor of 6.25 to obtain the protein content of each fish sample. The ash content of respective sample was determined by dry-ashing o the samples at 550 C for 24h [8]. Data obtained for protein, ash and fat were corrected for moisture and presented on wet weight basis. All samples were analysed in triplicates and data were subjected to one-way analysis of variance (ANOVA). Post hoc analysis was done by the use of Duncan’s Multiple Range Test and means were separated at P<0.05 using the Statistical Package for Social Scientists computer software package [10]. The results of the proximate composition expressed in g/100g edible portion, are presented in Figures 1, 2, 3, and 4. The moisture contents of the fish samples are presented in Figure 1. The fish species had moisture contents within the range of 67 to 68.10 (g/100g). The moisture content in decreasing order is from P. senegalensis, S. crumenophthalmus, C. gariepinus to S. scrombus. The average moisture content of the fishes was 68.05 (g/100g) (68.05%). The values obtained in this study are within the values reported by Boran and Karacam [11] for shad (57 to 68%) and for horse mackerel (65 - 75%) from the Black Sea of Turkey. The protein contents of the fishes in this study are within the range of 21.28 to 21. 65 (g/100 g) (Fig. 2). These values indicate that they are high protein sources for the consumers. The minimum and maximum protein values are reported for S. crumenophthalmus and S. scrombus respectively. These values are above those of other fishes. Palani et al . [12] discovered that the protein content of fatty fishes that landed in the Thoothukudi Coast of India was 14%. Amounts of protein in five species of marine fish consumed in Gabon ranged from 16% to 20% [13]. Gokoglu et al . [4] documented (19.8 - 29.0) % for rainbow trout ( Onchorhynchus mykiss ) subjected to various cooking methods. Some freshwater and marine Thai fishes in the raw state were reported by Puwastein et al . [14] (1999) to have their protein contents ranging from 17 to 22 g/100 g. All fish types were found to be high in fat content. Scomber scrombus, C. gariepinus and S. crumenophthalmus, had significantly higher fat contents (9.27, 9.02 and 8.94 g/100g respectively) than that (8.55 g/100g) P. senegalensis at P<0.05 (Fig. 3). They could, therefore, be termed as oily or fatty fishes. However, fats or lipids from fish should not be of great health concern as they have been known to contain polyunsaturated fatty acids, which help to fight coronary heart diseases [14], [15]. The average value of the ash contents for the four fish species is 1.45 (g/100g) (Fig. 4). This value closely agrees with the range of ash values (1.35 - 1.66%) obtained for rainbow trout by Gokoglu et al . [4]. It is also within the values (0.95 – 2.50%) reported for silver catfish by Weber et al . [7], but is lower than 2.5 - 6.25% obtained in raw mince of five different Indian fish species [16]. The variation noticed could have been due to variations in age, sex, and environment [17]. The four tropical fish species analysed in this research are high in protein and can also be considered as oily fishes. The fish species differed significantly (p < 0.05) in the moisture, protein and fat contents, but the ash contents were similar. The obtained data from this study will supplement the information on Nigerian food composition tables. Fish consumption is generally considered as healthy due to their nutritional benefits that they ensure food security in many low and middle-income countries. Especially the Omega-3 fatty acids and essential amino acids present in the fish had beneficial effects on the Coronary Heart Disease (CHD) and reduce the Protein Energy Malnutrition (PEM) in these countries. Being an island and expanding aquatic resources, Sri Lanka has plenty of fish resources, but, the consumption of small fish among the population has decreased in the country over the past 20 years. So, it is essential to be aware of the nutritional content of particular fish species that are assumed to be undervalued. This study, it was aimed to compare the nutritional composition of three local fish species namely, Amblygaster sirm, Sardinella brachysoma and Oreochromis niloticus. Proximate composition, pH and calorific values of the fish meat were determined by standard methods and other relevant protocols. The fatty acid profiles of oils of the fish were examined using the GC-MS method. Results showed that there were significant (p<0.05) differences among the three fish species with respect to the proximate parameters and fatty acid composition. When compared to the other two species, S. brachysoma exhibited the highest quantity of crude protein and fat, with 19.23% and 4.85% respectively. Among three fish species, the total mono-unsaturated fatty acid (MUFA) and poly-unsaturated fatty acid (PUFA) contents ranged from 31 to 38%; particularly, quantities of eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) were found to vary from 2.69 to 3.7% and 7.5% to 9.2%, respectively. Considering the Omega-6:Omega3 ratio, A.sirm (0.3), S. Brachysoma (0.69) and O. niloticus (6.5) were reported balanced values. In conclusion, these three fish species can be potential raw materials to produce high-value fish products.

Fish meat is an important source of nutrients, having organoleptic and dietary properties, especially important for human nutrition, in the form of essential and non-essential amino acids, and unsaturated fatty acids such as Omega 3, Omega 6, Omega 9 and Omega 12. They are essential for preventing and treating cardiovascular disease or various forms of cancer, like colorectal cancer. In the present study, characteristics and chemical properties of the meat were analyzed in eight different fish species: rainbow trout (Oncorhynchus mykiss), common carp (Cyprinus carpio), silver carp (Hypophthalmichthys molitrix), European sea bass (Dicentrarchus labrax), golden grey mullet (Liza aurata), mackerel (Scomber scombrus), sea bream (Sparus aurata) and prussian carp (Carassius gibelio). The characteristics and chemical properties of the meat were analyzed, taking into account the anatomical muscle segments (epaxial muscles, hypaxial muscles and caudal peduncle muscles). The analyses of the chemical composition of the meat consisted of: water content (%), dry matter (%), crude protein (Pb%), crude fat (Gb%) and mineral content (Min.%). The proximate analysis results are influenced by many factors, such as the sex of fish, the age of fish, the catch season, the farming system used, the geographical region of catch, the time from harvest to analysis, the conservation method, and many others. The results offer important information regarding the structure and composition of fish meat available on the market.

Fish is a perishable commodity whose quality must be maintained along the production and supply chain. The study aimed at assessing post-harvest fish losses among artisanal fishers in Northeast Nigeria. A multistage random sampling procedure was adopted to select 227 respondents. Quantitative data were collected with the use of close-ended questionnaires. Data collected were subjected to descriptive statistics and a multiple linear regression model. The results of the study revealed that the majority of the fishers were uneducated married men, with mean age and fishing experience of 46 and 8 years respectively. On average, 23.15% of fish caught are lost daily at post-harvest which could be attributed to the non-availability of infrastructural facilities, low literacy level, and management problems. Furthermore, results from multiple linear regression show that age, educational qualification, fishing experience, packaging materials, the time frame of fishing activities, and days of fishing in a week were found to be statistically significant (p < 0.05) with post-harvest fish losses. Conclusively, to improve the livelihood, ensure food security, and reduce the cost incurred by the Nigerian government on food importation post-harvest losses should be averted through policy formulation geared towards reducing post-harvest losses, provision of infrastructural facilities, training, and retraining of fishers.

Concentrations of trace elements were determined in sediment and muscle tissues of African sharptooth catfish (Clarias gariepinus) from Lake Ngami in Botswana. Sediment and tissue samples were acid digested and analyzed using ICP-OES. Element concentrations followed the order iron>>manganese>>zinc>copper>chromium>nickel>lead>arsenic in sediment and iron>zinc>arsenic>chromium>copper>lead>manganese>molybdenum in fish. Levels in the sediment were higher than in fish muscles for all but molybdenum, which was below detection in sediment; and arsenic, which was 2.8 times more in fish muscles. The concentration of arsenic in muscle tissues was also 11 times higher than reported in previous studies of catfish from African waters. The cancer risk and target hazard quotient (THQ) for each element in four groups (two Okavango Delta communities, average persons in Botswana and Sub-Saharan Africa) were assessed following the US-EPA risk assessment method. The THQ for only arsenic and chromium were above 1, suggesting that the two elements pose an appreciable risk of deleterious non-carcinogenic effects to human consumers of the fish. The cancer risk from exposure to arsenic in fish exceeded the acceptable level of 10-4 and ranged from 0.0004 to 0.007. These results support the need for future research of arsenic and chromium bioaccumulation in benthivorous fish species, which may be posing health risks to the Okavango Delta communities who rely on these fish as a protein source.

Collagen is used for a variety of biomedical and pharmaceutical uses, such as osteoarthritis-related pain management, hypertension, tissue engineering, and human implants, and is generally derived from porcine or bovine. Collagen from these animals has limitations due to the risk of disease transmission and religious constraints. Therefore, this study investigated the extraction of collagen from catfish (Silurus triostegus) waste. Acid-solubilized collagen and pepsin-solubilized collagen were extracted from catfish skin, fin, head, bone, and muscle. SDS-PAGE patterns of the extracted collagen showed that the protein molecular weights ranged from 97 to 200 kDa and skin, bone, and fin collagen consisted of 2 distinct α chains, which is typical of type 1 collagen. The proximate composition (moisture, protein, fat, and ash) and yield of the obtained extracts were determined. Skin collagen extracts were selected for further investigation due to the high collagen yield. The effects of the pH and salt concentration on solubility, and the denaturation temperature, FTIR spectra, reverse-phase HPLC, and SEM analysis were investigated to characterize the collagen samples. Based on the characterization of catfish skin collagen, this waste material has potential for use in the pharmaceutical and food industries.

High cost of qualitative fish feed is one of problems hampering the development and profitability of fish farming and consequently leads to food insecurity in terms of food availability and accessibility. The study was conducted to determine growth parameters and carcass composition of Clarias gariepinus juveniles of mean weight 21.74g+0.54g fed with varying levels of dietary inclusion of Clitoria ternatea seed meal substituted for soybean meal over a period of eight weeks. Four iso-nitrogenous experimental diets were formulated at 0% (control), 25%, 50% and 100% inclusion levels of C. ternatea seed meal. The 8-week feeding experiment was conducted in rectangular plastic tanks, each treatment having three replicates with two feeding regime at 5% body weight and weighed every week. At the end of the intensive feeding period, samples from each treatment were oven dried for nutritive analysis of the fish carcass. The values of mean weight gain for diets I and III were 27.7+1.11 and 27.23+0.94 respectively. Comparatively, the growth parameters values; FI(g), SGR(%), FCR(g), PER(%) and NPU(%) for control diet and diet III were the best with no significant difference (p>0.05). The Carcass evaluation revealed that Diet I had the highest crude protein which was not significantly different (p>0.05) from diet III. It was established that fish fed 50% inclusion level of C. ternatea seed meal had effective comparable biological values with the control diet in terms of growth performance and feed utilization. The total fish production (kg) showed no significant difference (p>0.05) between diets I and III.

Microalgae are increasingly being studied to replace fishmeal in aquafeed production. Low level Spirulina supplementation to various fish species has been widely investigated, demonstrating enhanced growth and better product quality. In order to evaluate the effects of a full fishmeal replacement with Spirulina (Arthrospira platensis) on growth and product quality in African catfish (Clarias gariepinus), two isoenergetic diets were formulated and fed for ten weeks to 120 fish with an average initial weight of 50 ± 3 g. Full supplementation of Spirulina resulted in reduced growth (p < 0.001) whereas feed conversion ratio was on par (p > 0.05). Furthermore, Spirulina-fed fish showed a more intense yellow coloration in skin, and raw and cooked fillet (p < 0.001). The analysis of fatty acids revealed higher proportions of C16:0 (p < 0.001) and C18:2n6 (p < 0.05) in fish fed the Spirulina-diet while C24:0 (p < 0.01) and C20:5n3 (p < 0.001) were found to be higher in the control group. Even though no statistically significant differences in the overall SFA, MUFA and PUFA were detected, a slight increase of the n6/n3 ratio was observed in the Spirulina-fed fish. Without further optimization of the feed ration, a complete fishmeal replacement with Spirulina can lead to economic losses. It remains to be studied whether the observed changes in product quality affect consumer acceptance.
