The search for the consumption of foods with functional potential has increased, encouraging by the need to improve the quality of life. In general studies show that the group of bioactive compounds is one of the main responsible for several effects beneficial to human health. Within this large group we can highlight the compounds phenolics. These are considered one of the most common groups of phytochemicals, and are defined as secondary metabolites that are derived from some metabolic pathways. of the plants. In addition to the benefit to human health, these compounds are also very important for the defense system of plants. Due to all these benefits several techniques are used to study compounds of interest. Amongst them we can highlight the paper spray technique that has gained visibility due to its efficiency and simplicity of execution. In this context we aim in this chapter bring a brief literature review on the subject using as a search tool different scientific databases. 56 studies used for the elaboration of this text. It was found that the technique is efficient and has been widely used in food analysis and despite being a relatively new technique it is already well established, having its use in a promising way.
